AND THE EVOLUTION OF ITS BRASSERIE

TASTES OF THE LOW LANDS

In September 2019, Hypercoaster was asked to support the iconic Conservatorium Hotel in Amsterdam with the development of a new concept for its Brasserie. At that time, the Brasserie had been in operation for eight years and although it had always shown positive results, the concept had remained nearly the same over the years.

With the influx of both local and international trends, the question had risen to what extent the current concept would still sufficiently be relevant to the market and the hotel.

Hypercoaster was commissioned to propose a new concept for the Brasserie, taking into consideration the developments in the market, the identity of the hotel as well as the background of a new high-flying chef. 

Hypercoaster proposed a new cuisine that was labelled as ''Tastes of the Low Lands": a new-wave Northern-European cuisine, using the tastes, ingredients and recipes from The Netherlands, Germany, Belgium, North-West France, UK, Denmark and Sweden.
